Some Tips for Preparing the Freshest Mushrooms

For many people, mushrooms are an intimidating food. You may not be sure how to clean, cook or store them.

Preparing mushrooms correctly will help ensure that your food has the highest nutritional value and the best texture. Here are some tips for preparing the freshest mushrooms, straight from the experts at Agrilinks Mushrooms.


Know when to wash

Many people are confused about whether to wash mushrooms before eating them. While it's okay to occasionally run mushrooms underwater (such as when you're preparing a soup or a pot of rice that will turn liquid as they cook), rinsing is usually not recommended.

Even the quickest rinse will leave the surface of your mushroom caps slimy and damp, and soaking them will cause them to swell and damage your flavour and texture.

Instead, wipe them off with a damp paper towel before preparing them for use. Don't prepare them before cooking, as you will only be promoting the ageing process and your mushrooms won't last long. Sometimes they just need to be gently scrubbed with a dry brush to remove any residual dirt.


The way to slice mushrooms

While slicing is a popular choice, you can cut mushrooms in a variety of ways. We recommend chopping mushrooms depending on the size of the fungus at hand, but the most common types are easily cut into squares or quarters.

The larger Suillus Granulatus can be diced. Simply clean the roots, cut off the veil around the outer edges and cut lengthways, then horizontally. 


Don't squeeze them together

Whichever variety you choose, mushrooms have a very high water content. Overcrowding mushrooms on a pan will not allow the released moisture to escape.

That's why when you cook a ton of mushrooms in a small pan, you may notice that your fungi become too moist - the steam has nowhere to go and stays in your mushrooms. The next time you have a lot of mushrooms to sauté, divide them into batches and choose your largest pan on the cooker. Alternatively, consider roasting them in the oven on a baking tray.


Freeze for later

If you find you can't finish a whole box of thawed mushrooms, freeze it again for mushrooms. Simply slice them and fry them in a pan.

Place them in a freezer-safe plastic bag and mark the date with a marker. If prepared and stored properly, your mushrooms will keep in the freezer for up to six months.
